This has to be one of the most inventive desserts I've ever seen, courtesy of and at the Gold Service Scholarship Awards recently . . I must admit that these beauties were so convincing that I didn't even realise they were a dessert at first (maybe the glasses of also helped )... I went to remove the pearl from the shell and was then told that I could eat the whole bloody thing?! . . Absolutely delicious... White chocolate shell, housing a white chocolate pearl filled with lemon vodka, sat atop a little puddle of coconut foam and adorned with lemon 'caviar' pearls and lemon balm . . I LOVE when chefs get inventive and play with food - it's amazing what can be created, especially when we eat with our eyes first and clock something as recognisable as a saline, mineral oyster, only to be taken by surprise by sweet, citrus flavours . . Do you guys know anywhere else that gets really creative with food? . . . . .
